The south Asian variety is made by deep-frying maida flour (plain flour or all-purpose flour) batter in pretzel or circular shapes, which are then soaked in sugar syrup. Jalebi is eaten with curd or rabri (in North India) along with optional other flavors such as kewra (scented water). In some west Asian cuisines, jalebi may consist of a yeast dough fried and then dipped in a syrup of honey and rose water.[citation needed] The North African dish of Zalabia uses a different batter and a syrup of honey (Arabic: ʻasal) and rose water.
زولبیا یا جلیبی نوعی شیرینی است که منشأ آن کشور هند یا اتیوپی، یا ایران یا ترکیه دانسته شده‌است. معمولاً همراه با بامیه و گوش‌فیل به فروش می‌رسد. از مواد اولیه اینگونه شیرینی می‌توان به ماست و نشاسته و خمیرمایه اشاره کرد که پس از ترش شدن و به اصطلاح ورآمدن آن را به آرد اضافه می‌کنند. غالباً زولبیا و بامیه در ماه رمضان در هنگام افطار مصرف می‌شود. تولید و مصرف این شیرینی در گستره وسیعی از جهان شامل شرق آسیا، خاورمیانه و شمال آفریقا رواج دارد.
