Caramel toffees have a very delicious and attractive taste. This taste is created by caramelization or decomposition of some sugar molecules due to heating of carbohydrates. During the preparation of these toffees, another reaction occurs between the heated sugars and the proteins in the milk solids, and a brown color is created.
تافی های کاراملی طعم بسیار خوشمزه و جذابی دارند. این طعم به وسیله کاراملیزه شدن یا تجزیه بعضی از مولکولهای قند در اثر حرارت دادن کربوهیدرات ها ایجاد می گردد. در هنگام تهیه این تافی ها واکنش دیگری نیز بین قندهای حرارت داده شده و پروتئین های موجود در مواد جامد شیر رخ می دهد و رنگ قهوه ای به وجود می آید.
